Chicken in Creamy Garlic Sauce

I’m not going to tell you how to live your life, but if you’re looking for something to make for dinner this week, I highly suggest this recipe. Especially if you are a fan of garlic! I mean honestly, for me, garlic could be its own food category. I was watching a cooking video the other day and they said “make sure you cut the garlic well because no one wants to each a chunk of garlic” and I just laughed. 

There are plenty of recipes out there that have chicken mixed in with something, but it’s hard to find ones that serve it alone that aren’t just seasoning it different ways. This chicken gets a nice kick of flavor by having this sauce, and I love it! In reality, you could probably cook this chicken whatever way you want and as long as you serve it with the sauce you’d be good!

Ingredients

  • 2 chicken breast
  • Salt and Pepper
  • Garlic powder
  • Olive oil
  • 2 tbsp butter
  • 1/2 yellow onion
  • 1 garlic bulb
  • 1 1/4 c chicken broth
  • 1 1/4 c heavy cream
  • 1/2 c parmesan
  • Your choice of sides

Directions

  1. Dice onion, mince garlic
  2. Slice the chicken breasts horizontally to create 4 breasts in total
  3. Season each breast with salt, pepper and garlic powder
  4. Heat olive oil and 1 tbsp of butter over medium heat and cook the chicken until golden and fully cooked (165° internal temperature)
    • If you need to cook the chicken in multiple rounds, add another tbsp of butter when you cook the remaining breasts
  5. Remove chicken from pan and wipe out pan
  6. Heat olive oil over medium heat and add onion to pan. Saute until soft
  7. Add in garlic and cook until fragrant, about 2 minutes
  8. Pour in broth and scrape the bottom to deglaze the pan. Simmer until liquid is reduced to half
  9.  Stir in heavy cream. Reduce to low and allow it to simmer for 5 minutes
  10. Mix in cheese and allow it to melt
  11. Season with salt and pepper
  12. Put chicken back in pan and let it cook for 5 minutes or more, flipping the chicken to ensure both sides get coated in sauce
  13. Serve with your choice of sides
